Rich, no-prepare lemon cheesecake filling layered over a graham wafer hull and bested with new blueberries. These flavorful (and simple!) lemon blueberry tarts are made single-serving-sized in bricklayer container tops!

Our neighbors invest a fantastic measure of energy cautiously keeping an eye on their gardens. They go through hours manicuring them, cutting them (and clearing them?! Is that ordinary?) and paying green and white vans to appear and treat each cutting edge with concoction mixed drinks, abandoning brilliant yellow banners on the borders of their property cautioning youngsters and mutts to KEEP OFF.

In the interim, our yard, while all around ok kept up with week by week trimmings and weed-whackings (on account of Zach), is substantially less a lavish floor covering and significantly more a not well designed interwoven unique blanket. Our garden is a jumble held together with grass, however fundamentally punctuated with sprinkling creases of clover and clover blossoms, articulated patches of dandelions, both with radiant yellow countenances and puffy white whiskers, and a theme of buttercups and truly minimal purple blooms.

And keeping in mind that Zach and I may kid about what a humiliation our yard is in the midst of these impeccably kept gardens, I genuinely love our defectively immaculate, compound free grass with the majority of its hues and clovers (and particularly the dandelions — think about the honey bees!). It's pretty and straightforward and (perhaps my top choice) low support.

Ingredients

  • Crust
  • 2 cups graham cracker crumbs
  • 1 Tbsp sugar
  • 1/4 cup butter melted
  • Filling
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup lemon curd homemade or store-bought
  • 1/2 cup heavy cream
  • 16 oz blueberries washed and dried, for topping
  • 1 Tbsp apple jelly optional

Instructions

  1. Preheat oven to 350F.
  2. In a medium-sized bowl, use a fork to combine graham cracker crumbs and sugar.
  3. Add melted butter and stir until well combined.
  4. Take your mason jar lids and turn the flat piece of the mason jar upside down so that the crust will be in touch with metal, (and the rubber surface will be facing outwards, that way your food is not in contact with the rubber).
  5. Use a spoon to press graham cracker crumbs into lids, covering the bottom and sides.
  6. Transfer to a cookie sheet, and then bake on 350F for 10 minutes.
  7. Remove from oven and allow to cool completely before filling.
  8. Filling
  9. In KitchenAid or with hand-mixer, beat the cream cheese until creamy.
  10. With mixer on low-speed, gradually add powdered sugar until it is completely combined.
  11. Stir in vanilla extract and lemon curd. Scrape down the sides and bottom of the bowl.
  12. With mixer on medium-low speed, gradually add heavy cream until it has all been added.
  13. Increase speed to high and beat 1-2 minutes, until mixture is light and fluffy. Scrape down the sides and bottom of the bowl again, and beat briefly (about 10 seconds).
  14. Pipe (I scrape the filling into a ziploc bag, snip off one of the corners, and squeeze the filling into each tart) or pour the filling into each tart, filling just below the rim of the lid.
  15. Top with blueberries.
  16. If using apple jelly -- place in small microwave-safe bowl and heat in microwave until it is liquid (about 10-20 seconds). Gently and haphazardly brush on top of blueberries with a pastry brush for sheen.
  17. Serve & enjoy!
  18. Keep uneaten tarts refrigerated in an airtight container.
