Would you be able to envision cooking for these children? 😉 I adore them, yet they are not a simple team to manage toward the beginning of the day! I attempt to be thoughtful. Each and every other child is eating sugary oat, and they miss it, I get it. They miss Pop-Tarts and Go-Gurts and the various fun names for sugar. They live in a nation where they are barraged by a medication at each corner, and this medication is lawful and destructive, it's not reasonable for any of us.
Shockingly for them, they are screwed over thanks to "that mother," the one that will prepare three suppers per day (or two and serves remains, which is far and away more terrible). I'm alright with being "that mother, " and I trust you are as well.
The children were certain this formula wouldn't breeze through the endorsement assessment since it contained the feared "wet egg." This is a term that my youngsters use for any egg they esteem half-cooked. Otherwise called any egg that is not overcooked.

- 2 Red Bell Peppers
- 8 Eggs
- 1lb Breakfast Sausage (you only need 1/2 of this but can serve the rest with breakfast if you’d like or save for the next meal)
- 4 Tbsp Shredded Parmesan Cheese
- Coconut Oil
- Salt
- Pepper
Instructions
- In a small skillet brown breakfast sausage and drain, then set aside.
- Remove the tops from your red peppers and cleaning out the seeds. Cut peppers into 4 rings.
- Heat 2Tbsp of Coconut Oil in a skillet over medium-high heat. Place peppers in the skillet and let them cook while the oil heats.
- Once the oil starts to sizzle crack one egg into each ring. Be sure to pour the egg into the ring slowly so it has time to seal around the bottom of the ring. Some of the egg may leak out or overflow.
- Salt and pepper each ring to taste then add 2 Tbsp of sausage around the yolk of each ring.
- Cook eggs to desired doneness. I broke the yokes for the kids but still left them runny, I made my eggs over easy. The choice is yours.
