- 3 extra large sweet potatoes, washed, skin intact, sliced into wedges
- 2 tablespoons raw honey
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt, divided
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh dill
- Honey Tahini Sauce
- 3 tablespoons tahini (sesame seed paste)
- 2 tablespoons raw honey
- Juice from 1 lemon
- ¼ teaspoon salt
- 3 tablespoons water
Instructions
- Preheat the oven to 400 degrees. If you have "convect bake" option on your oven, use that setting and line a large baking pan with parchment paper.
- Cut the sweet potato into wedges and add to a large bowl.
- In a small bowl whisk the honey with the olive oil.
- Pour honey mixture in the large bowl with the potato wedges and sprinkle in the fresh herbs, tossing again until everything is lightly coated, then spread the potatoes evenly over the baking pan.
- Sprinkle with ¼ teaspoon of sea salt.
- Bake the wedges for 20 minutes, then flip and bake an additional 15-20 minutes.
- Move the potatoes to the top rack in the oven and broil for 2-3 minutes, watching closely, just to create a light caramelization on the potato wedges.
- Remove from the oven and transfer to a serving bowl, then sprinkle with the remaining sea salt and more fresh herbs if desired.
- Prepare the honey tahini dressing by blending all of the ingredients in a small blender or blending with a hand blender until smooth.
- Drizzle the potatoes with the honey tahini dressing or serve on the side as a dip.
- Serve sweet potato wedges while warm and enjoy!
