This Lemon Eclair Cake is a bend on one of our long-term most loved plans - Chocolate Eclair Cake. It is a tasty no-prepare dessert. It is so light and cushioned. SO natural to eat - too simple truly.
This Lemon Eclair Cake is too simple to make. It just takes around 5 minutes. The hardest piece of this entire formula is holding up medium-term to give the cake a chance to set up. It is torment!!! You need to pause however. You have to give the graham wafers time to mollify up before eating. I decorated the cake with some new lemon cuts - just to make it lovely.
- 1 (14.4-oz) box graham crackers
- 2 (3.4-oz) boxes instant lemon pudding
- 3-1/2 cups milk
- 1 (8-oz) container Cool Whip, thawed
- 1 (16-oz) can lemon frosting
INSTRUCTIONS:
- Spray the bottom of a 9x13 pan with cooking spray.
- Line the bottom of the pan with 1/3 of the whole graham crackers.
- In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping.
- Pour half the pudding mixture over graham crackers.
- Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
- Heat the container of prepared frosting, uncovered in the microwave for 30 to 40 seconds. Pour over the top of the cake.
- Refrigerate for at least 12 hours before serving.
